Ingredients: 

Cornwall is a chocolatiers dream in terms of ingredients.
Lots of small local producers help to make our chocolates special and a true taste of St Ives.
We use Honey from our fabulous Local Honey-Bee keeper Stephen Putnam, Cornish Clotted Cream from Trewithen Farm Dairy, several varieties of Delicious Raspberries and Strawberries grown by Allan & Tom Gillam and Sally Day, of Lower Trannack Farm, Kea Plums (a bit like a damson - and unique - only found in Truro!)…Cornish Sea Salt …Cornish Apple Brandy ..we could go on !

This means our chocolates also vary with the seasons and the supply of the different ingredients.
The chocolate we use in our products is always Real Chocolate - made using 100% Cocoa Butter*, a good Cocoa content and Natural Vanilla. Cocoa Butter is so important for the mouth feel and melt factor of chocolate. Sadly, many cheap factory-made chocolates substitute this luxurious silky Cocoa Butter for cheap vegetable fat and the expensive cocoa butter is sold to the cosmetics industry ! Test out the melt factor - cocoa butter melts at mouth temperature - so pop a piece of I Should Coco chocolate in your mouth and wait….and wait…just let the chocolate melt so slowly …that’s the wonderful cocoa butter at work !
Being St Ives, art has to be an important ingredient too - so we have the work of two wonderful St Ives artists Becky Borman and Liz Hough featured on our boxes and bars, And just to give us extra inspiration - we have their work on the walls of the shop too!
And the final ingredients ?
a large dose of passion, a splash of creativity and a wealth of inspiration !
